Ernie's Sweet Potatoes

Every Thanksgiving, Christmas, and Easter we are lucky enough to enjoy perfect sweet potatoes thanks to Ernie Collins, my grandma's second husband. There is no one who has been exposed to these that hasn't come away proclaiming it to be the best way to prepare sweet potatoes in the world.

Ingredients:

  • 3 Cups cooked and mashed sweet potatoes (this is about 4 large sweet potatoes)
  • ¾ Cup sugar, or less
  • 2 Eggs
  • ½ Cup butter (easiest if you melt it first)
  • 1 Tablespoon vanilla
  • ¾ Cup light brown sugar
  • 1/3 Cup flour
  • 1/3 Cup butter
  • 1 Cup chopped pecans

Directions:

  • Combine the 1st five ingredients in mixer bowl and beat for 2 minutes
  • Pour into buttered casserole
  • Combine remaining ingredients and sprinkle on top
  • Bake at 350 degrees for 30 minutes or longer if casserole is deep

Note: a small 8" x 8" casserole will work great.
